Low Fat Chocolate Cinnamon Flan
Spice up your family's Valentine's Day with a luscious chocolate-laced-with-cinnamon
dessert everyone will love. This Chocolate-Cinnamon Flan has
bigtime flavor and gourmet presentation without the fat. Just
make this sweetheart pleaser the night before, because like
everything good, it takes time. This recipe is from Prevention's
Health Guaranteed Cookbook and makes six servings.

4 cups 1% low fat milk

1/4 cup cocoa powder

1 teaspoon ground cinnamon

1 cup sugar

3 tablespoons water

4 eggs

1 teaspoon vanilla extract
Preheat oven to 350 degrees to bake place six custard cups
in a baking dish
In a large saucepan, combine milk, cocoa, cinnamon, and
1/4 cup sugar. Bring to a boil over medium heat. Cook, stirring
often for 20 to 25 minutes until the mixture is reduced to
about one cup. Cool slightly.
In a medium pan, combine water and the rest of the sugar.
Cook over medium high heat, stirring for one minute or until
the sugar is dissolved. Cover pan, bring to a boil and cook
for 2 to 3 minutes until bubbles are thick. Uncover and reduce
heat to medium. Cook without stirring for 2 minutes. Syrup
will turn amber in color. Immediately pour the syrup into
custard cups and swirl to coat bottoms and halfway up the
sides.
Whisk eggs in a large bowl (click
here for a really cool whisk!) Slowly, whisk in the milk
mixture. Stir in vanilla extract. Strain through a sieve and
pour into the cups. Put the cups in the baking dish and fill
the baking dish with 1/2 inch warm water. Cover the baking
dish with foil.
Bake 30 to 40 minutes until custard is set. One way to test
is to insert a knife. If it comes out clean, the custard is
set.
Remove from oven and carefully remove cups from baking dish.
Let cool for 15 minutes, then refrigerate until chilled, at
least 30 minutes.
To serve, run a knife around the edge and invert on to serving
plate.
